Fried Potatoes with Veggies



I love Sundays.  It is the one and only day of the week that we are not awakened by the chime of the alarm clock.  We can actually enjoy the comfort of our bed for as long as we desire.  The sun is up before us.  The neighbors are up before us.  We can stay in our pajamas all day long if we choose.  There is not a single place on earth we “need” to be.  Sundays are heaven.


I love a big breakfast on this heavenly day.  I enjoy going out for the first meal of the day, although going out for breakfast, especially on a Sunday, can mean waiting for up to an hour at some of our favorite haunts.  And truth be told, I am always happier with the meals I prepare myself at home.


Here is an easy dish I made yesterday with a few things I had on hand.


Fried Potatoes with Veggies

serves 2


1 large Yukon Gold potato

¼ large yellow onion, diced

1 large clove garlic, minced

½ medium head broccoli, chop the stalk and slice the florets 

1 fresh jalapeno, diced with seeds

1 Field Roast Smoked Apple Sage vegetarian sausage, sliced

1/2 medium tomato, chopped

handful of baby spinach, rough chopped

1 – 2 Tbsp olive oil

salt and pepper to taste

Cheddar Cheese – optional



Place whole potato in pan and cover with water.  Bring to a boil. lower heat a bit and simmer until the potato is tender but firm, about 15 – 20 minutes. Stick a small knife blade in and if it goes in easily, it’s done.  Drain potato and place on cutting board.  When it is cool enough to handle, dice into 1/2 inch cubes.


Heat oil in non stick pan over med-high heat.  When oil is nice and hot toss in potatoes.  Cook until golden and crispy then add chopped onions and jalapenos.





Saute for a few minutes until the onions and jalapenos are softened.  Add broccoli and garlic, toss or stir to distribute.  Cook for 1 – 2 minutes.





 Add sliced sausage, toss or stir to distribute and cook 1 minute




Add tomatoes and stir or toss to distribute



 immediately toss in spinach………


 cook just until it wilts.


Salt and pepper to taste and you can call it ready at this point if you want to serve it as a yummy vegan breakfast or brunch dish or you can add some grated cheese of your choice.



Serve with toasted bread of choice, fresh fruit and a hot beverage and you won’t miss the restaurant at all.  Well, except for that being served thing and the clean up.
